Veggie Egg Drop Soup

Ingredients

1/2 Cup Mixed Vegetables (chopped carrots, chopped french beans, green peas)
1/2 Cup Cabbage, shredded
1 Egg
Salt to Taste
3-4 Garlic Cloves, minced
2 Tblspn Corn Flour (Cornstarch)
3 Tblspn Water
1/2 Tspn Black Pepper Powder
1 Tblspn Butter or Oil
2 1/2 Cups Water or Vegetable Stock

Directions
  • In a small bowl; add cornflour, 3 tablespoons water & mix well to form a smooth mixture. Keep aside.
    • Whisk egg in a bowl & keep aside.
    • Heat butter in a sauce pan on medium flame; minced garlic, chopped veggies, shredded cabbage & saute them for 3-5 minutes. 
    • Add water or vegetable stock & let it come to a boil. Add salt, pepper powder & mix everything well. 
    • Add corn flour mixture by stirring continuously so that lumps are not formed. 
    • Boil for another 5-8 minutes or until mixture turns thick & add whisked egg little by little by stirring continuously. 
    • Cook for another 2-3 minutes & turn off the flame.
    • Serve hot.
