Basic Vanilla Cake

Ingredients

2 1/4 Tspn Baking Powder
3/4 Cup Vegetable Oil
1 Cup Milk
2 1/2 Cup All Purpose Flour
4 Eggs
1 1/4 Cup Fine Sugar
1 Tblspn Vanilla Extract
1/4 Tspn Salt

Directions
  1. Preheat oven to 375F(190.5C).
  2. Grease a 9-inch glass baking pan.
  3. In another bowl, sift the dry ingredients together.
  4. With an electric mixer on high, beat sugar, eggs & vanilla in a mixing bowl for one minute to thicken.
  5. On low speed add dry ingredients but do not over-mix.
  6. Pour the batter into a greased pan & bake for 30 minutes or until a toothpick inserted in the center comes out clean. Remove the pan from oven, let it cool at room temperature & serve.
Note: Cover the left over cake with a plastic wrap or foil to prevent drying out & stays fresh for 2-3 days at normal room temperature.
