Egg & Cheese Pinwheels With Puff Pastry

Ingredients

1 Sheet of Puff Pastry
1 Tblspn Butter
1 Small Sized Onion, finely chopped
2 Tblspn Mini Sweet Peppers, finely chopped
2 Eggs
1/4 Cup Cheddar Cheese, shredded
Salt to Taste
1/2 Tspn Garlic Powder
1/2 Tspn Pepper Powder
1/2 Tspn Dried Oregano Leaves


Directions
  1. Preheat oven to 400F(204C). Line your baking tray with a sheet of aluminium foil coated with cooking spray.
  2. In a bowl, whisk the eggs using a spoon & keep aside.
  3. Heat butter in a pan on medium flame; add onions, sweet peppers & saute for 2-3 minutes. Pour in the beaten eggs & scramble lightly. Now add pepper powder, salt, garlic powder & dried oregano leaves & cook for 5-10 minutes or until cooked completely. Switch off the flame.
  4. On a floured surface, place the thawed puff pastry sheet, then roll it into a 10*12 inch rectangle. Spread egg & onion mixture on the sheet, leaving a 1/2 inch border on all sides. Sprikle with cheddar cheese.
  5. Starting at the long(12 inch) edge, roll the puff pastry into a log. Trim the ends so that they are even, carefully cut into 1 inch wide slices( you will get 12 rolls). Arrange the rolls 1 inch apart on the baking tray.
  6. Bake for 15-20 minutes or until golden or crispy & remove the baking tray from oven.
  7. Serve warm.
