Veggie Omelette With Cheese

Ingredients

2 Eggs
1 Tblspn Sweet Mini Peppers, chopped
1 Tblspn Spinach, chopped
1 Tblspn Onion, chopped
1 Tblspn Mint(Pudina) Leaves, chopped
Salt & Pepper to Taste
2 Tblspn Swiss Cheese, shredded
1 Tspn Oil


Directions
  1. Beat eggs together until well blended; add salt, pepper & mix well.
  2. Heat oil in a pan on medium flame; add mini peppers, spinach, onion, mint(you can also add chopped mushrooms) & saute  it for a minute.
  3. Pour eggs into pan & cook until edges are brown, approximately 2-3 minutes.
  4. Flip omelette over; add cheese on top of it & cook for an additional 2-3 minutes.
  5. Turn off the flame & serve hot.
