Egg Hakka Noodles

Ingredients

1 Packet or 150 Grams Hakka Noodles
2 Eggs
1 Medium Sized Onion, thinly sliced
1/2 Cup Baby Carrots, sliced lengthwise
1/2 Cup Sweet Mini Peppers, sliced lengthwise
1 Tblspn Red Chilli Sauce
Salt to Taste
1/2 Tspn Garlic Powder(optional)
1/2 Tblspn Soya Sauce
1 Tspn Vinegar
1/4 Tspn Pepper Powder(optional)
2 Tblspn Oil

Directions
  • Bring water to a boil in a pot, add little salt. Now add hakka noodles & let it cook till it is done (Note: Cook noodles according to the directions on the package). 
  • Drain the noodles in a strainer & rinse it with cold running water. Keep it aside.
  • Whisk eggs in a bowl with spoon.
  • Heat 1 tblspn oil in a sauce pan on medium flame, pour in the whisked eggs & scramble lightly. Once it is cooked remove from the pan & place them in a plate. Keep aside.
  • Heat 1 tblspn oil in the same pan on medium flame, add mini peppers, onion, carrots & stir fry for 5-8 minutes. Now add scrambled eggs & combine well.
  • Add soya sauce, vinegar, red chilli sauce, pepper powder, garlic powder, salt & saute for a minute.
  • Add cooked noodles & stir fry for another 3-5 minutes. Turn off the flame.
  • Serve hot.
