Kaju Katli

Ingredients

1 Cup Cashew Nuts
1/2 Cup Sugar
1/4 Tspn Green Cardamom(Ellachi) Powder
1/4 Cup Water
1 Tspn Ghee/Clarified Butter

Directions
  1. In a dry mixie jar add cashew nuts & grind it into a fine powder. keep aside.
  2. Heat a pan on medium flame; add water, sugar & cook for a few seconds or until sugar is dissolved.
  3. Add cashew nut powder, cardamom powder & mix well. Stir it continuously with a spatula so that it doesn't get burned at the bottom & mixture starts to thicken.
  4. Once it forms a thick paste or dough consistency turn off the flame & if mixture gets overcooked kaju katli will turn brittle. 
  5. Once the mixture is warm enough to handle apply some ghee to your hands (you cannot knead it well if the mixture completely cools down so work quickly here). 
  6. Knead the mixture into a smooth dough for a minute & grease a plate with ghee.
  7. Transfer the dough onto a greased plate & roll the dough with a rolling pin into a rectangular shape about 1/3 inch thickness.
  8. Cut them into desired shapes(diamond, rectangle or triangle) using a knife ( yield 20-25 kaju katlis) & serve.
Note: Store it in an air tight container & stays fresh for a week at room temperature. Stays fresh for 3-4 weeks when stored in refrigerator.
