1/2 Cup Sooji/Semolina/Bombay Rava
1 Cup Whole Milk(Full Fat)
1/2 Cup Sugar
1/8 Tspn Green Cardamom Powder
1 Tblspn Cashew Nuts, broken
1 Tblspn Raisins
3 Tblspn Ghee/Clarified Butter

Directions
- Heat 2 tablespoon ghee in a sauce pan on a medium-low flame & add sooji. Roast them for 3-5 minutes or until golden brown colour by stirring continuously.
- Now add milk by stirring continuously so that lumps are not formed & sooji starts to thicken by leaving the sides of the pan.
- Cook for another 3-5 minutes & add sugar, cardamom powder by stirring continuously. Mix & cook for 2-4 minutes or until sugar dissolves completely. Turn off the flame & transfer to a bowl.
- Heat 1 tablespoon ghee in another pan on a medium-low flame; add cashewnuts, raisins & saute for 1-2 minutes or untill lightly browned. Turn off the flame & add to sooji halwa by reserving few for garnish.
- Mix everything well & serve warm.
Note: You can also use water instead of milk.
