Lemon Rice/Nimmakaya Pulihora

Ingredients

3 Cups Cooked White Rice (1 cup uncooked rice yields 3 cups cooked rice)
1 Large Sized Lemon or add as needed ( cut & squeeze the juice)
Salt to Taste

For Tempering

2 Tblspn Oil
2 Green Chillies, slit on one side
1/4 Tspn Cumin(Jeera) Seeds
1/4 Tspn Mustard(Avaalu) Seeds
2 Dried Chillies
Few Curry(Karivepaku) Leaves
1/4 Tspn Chana Dal(Chanaga Pappu)
3 Tblspn Peanuts(Palli)
1/4 Tspn Turmeric Powder

Directions
  • In a mixing bowl; add cooked rice (before adding rice let it cool at room temperature), lemon juice, salt & combine everything well.
  • For tempering; heat oil in a pan on medium-low flame & add cumin seeds, mustard seeds. 
  • Let them splutter & add chana dal, curry leaves, dried chillies, green chillies. Saute for a minute & add peanuts. 
  • Saute for another 2 minutes & finally add turmeric powder. Mix everything well & turn off the flame.
  • Add to the lemon rice & mix everything well.
  • Serve lemon rice.
