Mamidikaya Pulihora/Green Mango Rice

Ingredients

3 Cups Cooked White Rice (1 cup uncooked rice yields 3 cups cooked rice)
1 Large Sized Raw Mango/Mamidikaya; peel, grate & discard the seed
2 Green Chillies, slit on one side
1/2 Tspn Tumeric Powder
Salt to Taste
1/2 Tspn Cumin(Jeera) Seeds
1/2 Tspn Mustard(Avaalu) Seeds
3 Tblspn Groundnuts(Palli)
1 Tspn Chanaga Pappu
Few Curry Leaves
2 Dry Chillies
1 Tblspn Oil

Directions
  • For tempering; heat 1 tablespoon of oil in a pan on medium flame & add cumin seeds, mustard seeds, chana dal. Saute for a minute & add dry chillies, green chillies, curry leaves, groundnuts & saute for another 2 minutes.
  • Transfer to a bowl & keep aside.
  • Heat remaining oil in the same pan on a medium-low flame; add grated raw mango, turmeric powder & cook for 2 minutes by stirring continuously.
  • Turn off the flame & keep aside.
  • In a mixing bowl; add rice (before adding rice let it cool at room temperature), cooked grated mango, salt & mix everything well.
  • Now add tempering into the bowl & mix.
  • Serve green mango pulihora.
