Directions
- Wash moong dal under running water & soak them in enough water for 4 to 5 hours or overnight.
- Add soaked moong dal to a mixie jar (drain water completely before adding) & grind into a smooth paste by adding 2-3 tablespoons of water.
- Heat 5 tablespoons of ghee in a pan on a medium-low flame & add moong dal paste.
- Keep on stirring for 20-25 minutes or until golden brown colour (it might take even more time). After 25 minutes it will look like dry powder as shown in the picture below.
- Meanwhile; in a sauce pan add milk, water & place it on a medium flame. Let it come to a boil & turn off the flame.
- Carefully add boiled milk to the fried moong dal by stirring continuously & cook until milk gets absorbed completely or ghee getting separated.
- Lastly add sugar, cardamom powder by stirring continuously.
- Mix & cook for another 2-4 minutes or until sugar dissolves completely. Turn off the flame & transfer to a bowl.
- Heat 1 tablespoon ghee in another pan on a medium-low flame; add cashewnuts, raisins & saute for 1-2 minutes or untill lightly browned. Turn off the flame & add to moong dal halwa by reserving few for garnish.
- Mix everything well & serve warm.
