2 Cups Carrot, grated
3 Cups Whole Milk(Full Fat)
1/2 Cup Sugar or add as needed
1/8 Tspn Green Cardamom Powder
1 Tblspn Cashew Nuts, broken
1 Tblspn Raisins
3 Tblspn Ghee/Clarified Butter

Directions
- Heat 2 tablespoon ghee in a sauce pan on a medium-low flame & add grated carrot. Roast them for 8-10 minutes or until raw smell goes away by stirring occasionally.
- Now add milk by stirring continuously & cook until the milk has completely evaporated. To prevent burning keep stirring continuously.
- Add sugar by stirring continuously & mix. Cook till sugar dissolves completely or until halwa thickens.
- Lastly add cardamom powder (Note: You can also add grated khoya at this stage) & mix everything well. Cook for 1-2 minutes & turn off the flame.
- Heat 1 tablespoon ghee in another pan on a medium-low flame; add cashewnuts, raisins & saute for 1-2 minutes or untill lightly browned. Turn off the flame & add to carrot halwa by reserving few for garnish.
- Mix everything well & serve warm.
