3 Cups Cooked White Rice(1 cup uncooked rice yields 3 cups cooked rice)
1 Large Sized Capsicum or Green Bell Pepper, cut into medium sized pieces

For Masala Powder
1/2 Tspn Cumin(Jeera) Seeds
1/2 Tspn Mustard(Avaalu) Seeds
1 Small Cinnamon(Dalchini) Stick
2 Green Cardamom(Ellachi) Pods
2 Cloves (Lavang)
1/4 Tspn Black Cumin Seeds (Shahjeera)
1 Tblspn Coriander Seeds(Dhania)
3 Tblspn Peanuts/Groundnuts(Palli)
4 Dry Red Chillies

Directions
- For masala powder, heat a wide pan on a low flame & add all the ingredients. Dry roast until golden brown colour & turn off the flame. Keep aside & let it cool at room temperature.
- Blend into a coarse powder in a mixie jar & keep aside.
- Heat oil in the same pan on medium flame; add chopped capsicum or bell pepper & saute for 2-3 minutes on a medium flame(make sure not to overcook capsicum, as it should have a crunchy texture).
- Add prepared masala powder & mix everything well.
- Saute for a minute & add cooked rice. Mix everything well & saute for another 2-3 minutes. Turn off the flame.
- Serve capsicum masala rice with raita.
