Eggless Oats Banana Muffins

Ingredients

1 Cup All Purpose Flour
1/4 Cup + 2 Tblspn Quaker Oats
1 Ripe Large Banana, mashed
3/4 Cup Sugar
1 Tspn Baking Soda
Pinch Of Salt
1/2 Tspn Vanilla Extract
1/2 Cup Buttermilk
1/3 Cup Vegetable Oil

Directions
  • Preheat the oven to 400F(204C).
  • In a small bowl, sift the dry ingredients together (all purpose flour, salt, oats).
  • In a mixing bowl, whisk sugar, oil, buttermilk, mashed banana & vanilla extract until combined well.
  • Add the dry ingredients & mix it with a rubber spatula but do not over-mix the batter as it makes the muffins tough.
  • Fill greased paper-lined muffin cups three-fourths full with batter & sprinkle 2 tablespoons of oats over the top.
  • Bake for 15-20 minutes or until a toothpick comes out clean.
  • Remove the pan from oven, let it cool at room temperature & serve.

Note: Cover the left over muffins with a plastic wrap or foil to prevent drying out & stays fresh for 2-3 days at normal room temperature.
