Eggless Custard Cake

Ingredients

1 Cup All Purpose Flour
1/4 Cup Custard Powder, vanilla flavour
1/2 Cup Sugar
1 Tspn Baking Soda
Pinch of Salt
1/2 Tspn Vanilla Extract
1/2 Cup Milk
1/4 Cup Vegetable Oil

Directions
  • Preheat the oven to 375F(190.5C).
  • In a small bowl, sift the dry ingredients together (all purpose flour, salt, custard powder, baking soda).
  • In a mixing bowl, whisk sugar, oil, milk & vanilla extract until combined well.
  • Add the dry ingredients & mix it with a rubber spatula but do not over-mix the batter as it makes the cake tough.
  • Pour the batter into a greased 9-inch glass baking pan.
  • Bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Remove the pan from oven, let it cool at room temperature & slice.
  • Serve.
Note: Cover the left over cake with a plastic wrap or foil to prevent drying out & stays fresh for 2-3 days at normal room temperature.
