Tomato Soup

Ingredients

4 Medium Sized Tomatoes, chopped
1 Small Sized Onion, finely chopped
Salt to Taste
2-3 Garlic Cloves, chopped
4-5 Yellow Bell Pepper Cubes, 1 1/2-inch cubes
1 Tspn Maida/Refined Wheat Flour
3/4 Tspn Black Pepper Corns or 1 Tspn Black Pepper Powder
1/2 Tspn Cumin Seeds
2 Tblspn Butter
2 Cups Water
3/4 Tspn Dried Oregano
1/2 Cup Whole Milk(Full Fat)

Directions
  • Heat a tablespoon of butter in a sauce pan on medium flame; add chopped onion, garlic cloves, cumin seeds, pepper corns & saute them for 1-2 minutes. 
  • Add yellow bell pepper cubes (in this step you can also add chopped carrots & celery), chopped tomatoes, dried oregano & saute until they turn soft. 
  • Turn off the flame & keep aside. Allow it to cool at room temperature & grind or blend the tomato mixture into a smooth paste using a mixie jar. Keep aside.
  • Heat remaining butter in a sauce pan on medium flame; add all purpose flour & mix with a spoon as there should be no lumps formed.
  • Add milk & mix everything well. 
  • Cook for 2-3 minutes & add prepared tomato paste by stirring continuously. Now add water & let it come to a boil. Add salt & mix everything well. 
  • Boil for another 5-8 minutes or until mixture turns thick & turn off the flame.
  • Serve hot with toasted bread pieces.
