Ingredients
3 Cups + 1 Tblspn All Purpose Flour
1 Cup Fresh Blueberries
1 Whole Orange Zest

1/2 Tspn Salt
1/2 Tspn Vanilla Extract
1 1/3 Cup Milk
1/4 Cup Orange Juice, freshly squeezed
1/4 Cup Orange Juice, freshly squeezed
1/4 Cup Vegetable Oil
Directions
- Preheat oven to 375F(190.5C).
- In a bowl; add blueberries, orange zest, a tablespoon of all purpose flour & toss lightly to combine.
- In a bowl, sift the dry ingredients together (all purpose flour, salt, baking soda, baking powder).
- In a mixing bowl, whisk egg, sugar, oil, milk, orange juice & vanilla extract until combined well.
- Add the dry ingredients & mix it with a rubber spatula but do not over-mix the batter.
- Fold in the blueberry mixture.
- Grease a 9-inch glass baking pan.
- Pour the batter into a greased pan & bake for 30-40 minutes or until a toothpick inserted in the center comes out clean.
- Remove the pan from oven, let it cool at room temperature & slice.
- Serve.
Note: Cover the left over bread with a plastic wrap or foil to prevent drying out & stays fresh for 2-3 days at normal room temperature.
