Kubani ka Meetha

Ingredients

30 Unsweetened Dried Apricots (Pitted)
2 Cups Strained Water from the Soaked Apricots
1/3 Cup Sugar or add as required
1 Tblspn Almonds, sliced
1 Tblspn Apricot Nuts, sliced
4 Tblspn Fresh Cream (optional)

Directions
  • Soak dried apricots in enough water for 8 hours or overnight. 
  • After 8 hours, remove the soaked apricots from water & keep the soaked water aside.
  • If using seeded apricots deseed them & keep hard kernels aside. Break the kernels & discard the hard shell. Slice the nuts & keep aside.
  • Mash the soaked apricots with your hands or grind in a mixie jar into a coarse paste.
  • In a sauce pan on a medium-low flame; add mashed apricots, strained water & cook for 20 minutes. 
  • Add sugar & mix everything well (if the mixture looks dry add some more water). 
  • Cook for another 5 more minutes & turn off the flame. Add almonds, apricot nuts & mix everything well.
  • Serve warm or chilled in a serving bowl topped with fresh cream(optional).
Note: Store kubani ka meetha in an airtight container & stays fresh for a week when refrigerated.
