Sponge Cake

Ingredients

1 Tspn Baking Powder
3 Tblspn Melted Butter
2 Tblspn Hot Water
1 Cup All Purpose Flour
4 Eggs
1 1/2 Cup Powdered Sugar
1 Tblspn Vanilla Extract

Directions
  • Preheat oven to 350F(176.6C).
  • Grease a baking tray or aluminum tray.
  • In a bowl, sift the dry ingredients together & keep aside.
  • Combine melted butter, hot water in a small bowl & whisk together. Keep aside.
  • With an electric mixer on high, whip eggs about a minute in another mixing bowl & add powdered sugar while continuing to whip. 
  • Add vanilla extract & on low speed add dry ingredients but do not over-mix. Fold in melted butter mixture into the batter until no streaks of liquid are seen.
  • Pour the batter into a greased tray & bake for 40-50 minutes or until a toothpick inserted in the center comes out clean. 
  • Remove the tray from oven, let it cool at room temperature & serve.
Note: Cover the left over sponge cake with a plastic wrap or foil to prevent drying out & stays fresh for 2-3 days at normal room temperature.
