1 Cup White Button Mushrooms, sliced
1/3 Cup Baby Spinach Leaves, washed
4 White or Brown Bread Slices
4 Swiss Cheese Slices (you can use your choice of cheese)
1-2 Sweet Mini Peppers, finely chopped
3/4 Tspn Black Pepper Powder
Salt to Taste
1 Tblspn Oil
2 Tblspn Butter/Ghee(Clarified Butter)

Directions
For Stuffing
- Heat oil in a wide pan on a medium flame, add sliced mushrooms & saute for 8-10 minutes or until they turn soft.
- Add chopped mini peppers, baby spinach leaves & saute for 2-3 minutes.
- Add black pepper powder, salt & saute for another minute.
- Turn off the flame & keep aside.
- Apply butter/ghee on both sides of each bread slice & keep aside.
- For assembling a sandwich; take a bread slice & place 3 tablespoons of mushroom stuffing.
- Place two slices of cheese over the stuffing & cover it with another bread slice.
- Repeat the process with remaining bread slices.
- Place the sandwich in an electric grill & grill until golden brown.
- Transfer it to a plate & cut each mushroom sandwich diagonally.
- Serve grilled mushroom & cheese sandwich immediately with tomato ketchup.
