Ingredients
3/4 Cup Bombay Rava/Sooji/Semolina
1/4 Cup Maida/Refined Wheat Flour

1/3 Cup Sugar
1 Tspn Baking Soda
1/2 Tspn Vanilla Extract
1/2 Cup Milk
2 Tblspn Yogurt/Curd
2 Tblspn Yogurt/Curd
1/4 Cup Butter, melted
4 Tblspn Chopped Mixed Nuts (cranberries, walnuts, raw pepitas, pecans, almonds, pistachios) or you can also add your choice of nuts

Directions
- Preheat the oven to 375F(190.5C).
- In a mixing bowl; add melted butter, sugar, yogurt, milk, baking soda, vanilla extract & mix everything well to form a smooth consistency.
- Add sooji, maida & mix it with a spoon or a rubber spatula but do not over-mix the batter as it makes the cake tough (whisk until it forms a smooth batter without any lumps).
- Cover the bowl with a plastic wrap & let the batter rest for 30 minutes.
- After 30 minutes, sooji absorbs the liquid & will obtain a thick batter consistency.
- Gently fold in mixed nuts into the batter with the help of a spatula but do not overmix the batter.
- Coat a round baking pan with cooking spray & pour the batter into a greased baking pan.
- Bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Remove the pan from oven, let it cool at room temperature & transfer the cake to a plate.
- Slice & serve.
Note: Cover the left over cake with a plastic wrap or foil to prevent drying out & stays fresh for 2-3 days at normal room temperature.
