Grilled Corn & Cheese Sandwich

Ingredients

1/2 Cup Corn Kernels
2 Cups Water
1 Medium Sized Onion, finely chopped
1 Medium Sized Tomato, discard the seeds & finely chopped
4 White Bread Slices
2 Cheese Slices (you can use your choice of cheese)
3/4 Tspn Red Chilli Powder
1/2 Tspn Chaat Masala
2 Tblspn Cilantro Leaves(Kothmir), chopped
Salt to Taste
1 Tblspn Oil
2 Tblspn Butter/Ghee(Clarified Butter)

Directions

For Stuffing
  • In a heavy bottomed sauce pan add water & corn kernels. Boil them on a medium flame for 8-10 minutes or until they turn soft. Turn off the flame & drain water from the corn kernels. Keep them aside.
  • Heat oil in a wide pan on a medium flame, add onion & saute until they turn translucent.
  • Add red chilli powder, salt, chaat masala & saute for a second.
  • Add boiled corn kernels & saute for 2-3 minutes.
  • Add chopped tomato & saute for a minute.
  • Add cilantro leaves & mix everything well. Turn off the flame & keep aside.
  • Apply butter/ghee on both sides of each bread slice & keep aside.
  • For assembling a sandwich; take a bread slice & place 2-3 tablespoons of corn stuffing.
  • Place a slice of cheese over the stuffing & cover it with another bread slice. 
  • Repeat the process with remaining bread slices.
  • Place the sandwiches in an electric grill & grill until golden brown.
  • Transfer it to a plate & cut each corn & cheese sandwich diagonally.
  • Serve grilled corn & cheese sandwich immediately with tomato ketchup.
