Ingredients
1.5 Cup All Purpose Flour
1 Medium Sized Apple, peeled & grated
1 Tspn Cinnamon Powder
1 Tspn Baking Powder
1/2 Tspn Baking Soda
3/4 Cup Sugar
1 Tspn Vanilla Extract
1/2 Cup Yogurt
1/4 Cup Oil
1/4 Cup Ghee/Clarified Butter
2 Tblspns Walnuts, chopped
1 Tblspn Pistachios, chopped
1 Tblspn Almonds, chopped
Directions
- Preheat the oven to 375F(190.5C).
- With an electric mixer on high; beat sugar, oil, ghee, vanilla extract, cinnamon powder & yogurt in a mixing bowl for two minutes to thicken or until sugar melts completely.
- On low speed add baking soda, baking powder & all purpose flour but do not over-mix.
- Add grated apple & mix with a spoon.
- Grease a round glass baking pan with little oil & dust some flour. Pour the batter into a greased baking pan.
- Sprinkle chopped nuts on top & bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
Note: Cover the left over cake with a plastic wrap or foil to prevent drying out & stays fresh for 2-3 days at normal room temperature.
