Ingredients
1/2 Cup Peanut Butter
1/4 Cup Honey
1 Tblspn Coconut Oil or Ghee (I used ghee)
1 Cup Quaker Oats(quick or old fashioned)
1/2 Cup Mixed Nuts
1/4 Tspn Vanilla Extract
1/8 Tspn Salt
Directions
- Line a baking pan with an aluminum foil & grease little ghee on it.
- Heat a pan on low flame; add mixed nuts, oats & saute for 1-2 minutes or until raw smell goes away.
- Transfer to a bowl & let it cool at room temperature.
- Add honey, coconut oil or ghee, peanut butter in a wide pan & place it on medium-low flame.
- Stir continuously for 3-4 minutes & turn off the flame (make sure it does not get burned at the bottom).
- Add salt, vanilla extract & mix everything well.
- Finally add roasted mixed nuts & oats. Mix everything well & transfer to the greased pan.
- Spread it evenly with a spatula to 1-inch thickness & let it cool at room temperature.
- Place it in the refrigerator for an hour or until it sets completely.
- After an hour, cut them into bar shape & serve.
- Store it in an airtight container; stays fresh for 4-5 days at room temperature & 2 months when freezed.
