Amaranth(Thotakura) Roti/Chapathi

Ingredients


1/2 Cup or 125 Grams Amaranth Leaves/Thotakura, chopped & washed
1/2 Tspn Cumin Seeds
2-3 Green Chillies
1 Cup Wheat Flour(Atta)
Salt to Taste
1 Tspn Oil

Directions

  • Add amaranth leaves, cumin seeds, green chillies, salt to a blender jar & blend into a puree by adding a tablespoon of water.
  • In a bowl; combine wheat flour with prepared amaranth puree & make a dough. 
  • Drizzle oil on top to coat the dough & knead to a smooth ball(add little water if required). 
  • Cover with a damp cloth & let the dough rest for 10 minutes. 
  • Place the dough on a well floured surface & make 4 equal size balls from the dough. 
  • Take one dough ball & flatten it using your palm.
  • Using a rolling pin roll each dough into a thin circular shaped chapathi or into 7 inch diameter circle on the floured surface.
  • Heat a tawa on medium high flame. 
  • Place the chapatti/roti on heated tawa & once you see little bubbles, flip the chapathi/roti & drizzle some oil on top(optional). 
  • Flip again & drizzle some oil on the other side as well(optional). Flip again & press with a spatula for a minute. 
  • Fold & transfer to a plate or place them in a hot pack to serve later.
  • Serve with a side of curry or dal or pickle or curd.
