Ingredients
1/2 Cup Gram Flour/Besan
1/2 Cup All Purpose Flour/Maida
3/4 Cup Ghee/Clarified Butter1 Cup Sugar
1/4 Cup Water
1/8 Tspn Green Cardamom Powder(Ellachi)
1 1/2 Tblspn Honey
2 Tblspn Almonds, sliced
Directions
- Grease a steel plate with little ghee & keep aside.
- Heat ghee in a wide pan on a medium-low flame, add gram flour & all purpose flour. Roast for 6-8 minutes or until raw smell goes away by stirring continuously.
- Meanwhile boil water, sugar in a sauce pan on medium heat & then add honey, cardamom powder. Simmer the sugar syrup for 5-8 minutes or until it thickens.
- To check the right consistency of the syrup, add 2-3 drops of syrup in cold water & it should form a soft ball (make sure it should not get hard & crack).
- Turn off the flame & add sugar syrup to the besan mixture.
- Mix everything well & cook for another 3-5 minutes or until colour changes to golden brown by stirring continuously. Mixture starts to thicken & leave its sides.
- Turn off the flame & immediately transfer maida besan mixture to the greased plate & spread it evenly with a rubber spatula(grease little ghee to spatula) to 1-inch thickness.
- Sprinkle sliced almonds (you can also add chopped pistachios) & gently press it with a spatula.
- Wait for 3-4 minutes & once the besan mixture is warm enough(if mixture cools down completely its difficult to make cuts), cut them into rectangular or desired shapes.
- Serve.
Note: Store it in an airtight container & stays fresh for 4-5 days at room temperature. Stays fresh for 1-2 weeks when refrigerated.
