Ingredients
2 1/2 Cups Fresh Coconut, chopped
1 Cup Jaggery(Bellam), grated or finely chopped
1/8 Tspn Green Cardamom(Ellachi) Powder
2 Tblspn Cashew Nuts, chopped
1 1/2 Tspn Ghee/Clarified Butter
Directions
- Add chopped coconut pieces into a mixie jar & blend into a finely grated coconut (you can also grate the coconut using a grater).
- Heat ghee in a wide pan on low flame; add fresh grated coconut & saute until lightly dried (approx 3-4 minutes) as shown in the picture below.
- Add cashew nuts & saute for a minute.
- Finally add chopped jaggery & mix everything well.
- Stir it continuously with a spatula so that it doesn't get burned at the bottom.
- Cook until jaggery melts completely & mixture starts to hold shape.
- Add cardamom powder & mix everything well. Turn off the flame.
- Once the mixture is warm enough to handle (if the mixture completely cools down you cannot make laddus out of it), take a small amount of mixture in your hand & make a round shaped laddu (yields 10-12 laddus).
- Serve.
Note: Store it in an airtight container & stays fresh for 5-7 days at room temperature.
