Mango Shrikhand/Amrakhand

Ingredients

2 Cups Thick Yogurt/curd
1/2 Cup Mango Pulp
3 Tblspn Sugar or add as needed
1/4 Tspn Cardamom (Ellachi) Powder
1 Tspn Pistachios, chopped

Directions

  • Lay a strainer with a cheese cloth or cotton cloth & place it over a large bowl. Pour the curd into the cloth.
  • Grab the ends of the cloth & twist the ball of curds to squeeze out the excess liquid. 
  • Place it in the refrigerator & leave it for 4-5 hours (You can discard the liquid collected in the bowl or drink it).
  • Transfer the thickened curd to a blender jar along with mango pulp, cardamom powder, sugar & blend into a smooth texture. 

  • Transfer to a serving bowl & refrigerate for 2-3 hours.
  • Garnish with chopped pistachios & serve chilled.
