Beetroot Halwa Using Jaggery Powder

Ingredients

1 Cup Beetroot, peeled & grated
1 1/2 Cup Whole Milk(Full Fat)
1/3 Cup Jaggery Powder or add as needed
1/8 Tspn Green Cardamom Powder
1 Tblspn Cashew Nuts, broken
2 1/2 Tblspn Ghee/Unsalted Butter

Directions
  • Heat butter in a pan on a medium-low flame; add cashewnuts & saute for 1-2 minutes or untill lightly browned. Transfer cashew nuts to a bowl & keep aside.
  • To the same pan add grated beetroot & roast them for 8-10 minutes or until raw smell goes away by stirring occasionally.
  • Now add milk by stirring continuously & cook until the milk has completely evaporated. To prevent burning keep stirring continuously.
  • Add jaggery powder & mix. Cook until halwa thickens. 
  • Lastly add cardamom powder (Note: You can also add grated khoya at this stage) & mix everything well. Cook for a minute & add fried cashew nuts. 
  • Mix & turn off the flame. 
  • Serve warm.
