Chicken Fried Rice

Ingredients

3 Cups Cooked Rice (1 cup uncooked rice yields 3 cups cooked rice)
200 Grams Boneless Chicken
2 Eggs
3-4 Spring Onions, chopped
1 Tblspn Soya Sauce
Salt to Taste
1/2 Tspn Garlic Powder
1/2 Tspn Tomato ketchup(optional)
1 Tspn Vinegar
1 Tblspn Red Chilli Sauce
1/2 Tspn Pepper Powder
1 Tblspn + 1 Tblspn Oil

Directions
  1. Wash chicken under running water & drain off completely. Chop chicken into small (1/4 inch to 1/2 inch) cubes.
  2. Whisk eggs in a bowl with spoon.
  3. Heat 1 tblspn oil in a sauce pan on medium flame, pour in the whisked eggs & scramble lightly. Once it is cooked remove from the pan & place them in a plate. Keep aside.
  4. Heat 1 tblspn oil in the same pan on medium flame, add chicken pieces & stir fry for 10-15 minutes or cook until chicken turns tender & soft. Now add scrambled eggs & combine well.
  5. Add soya sauce, vinegar, tomato ketchup, chilli sauce, pepper powder, garlic powder & saute for a minute.
  6. Add spring onions & cooked rice. Stir fry for another 3-4 minutes. Turn off the flame.
  7. Serve chicken fried rice with chilli chicken.
