Dahi Puri & Chaat Chutney's(Green & Tamarind)

Ingredients

18 Puris
1 Large Sized Potato, boiled & peeled
1 Cup Yogurt (Curd)
1 Tspn Sugar
1 Small Sized Onion, finely chopped
1/4 Cup Sev
1/4 Tspn Red Chilli Powder
1/2 Tspn Chaat Masala
Salt to Taste

For Green Chutney

1 Cup Mint Leaves
3/4 Cup Cilantro Leaves
2-3 Green Chillies
1-2 Garlic Cloves
1 Small Sized Onion, chopped
1/4 Tspn Cumin (Jeera) Powder
1/2 Tspn Coriander(Dhania) Powder
1 Tspn Chaat Masala Powder
1 Tspn Lemon Juice
Salt to Taste
1-2 Tblspn Water

For Tamarind Chutney

14-16 Pitted Dates
2 Tblspn Jaggery
3 Tblspn Tamarind Extract
3/4 Tspn Red Chilli Powder
1 Tspn Chaat Masala
1/2 Tspn Coriander(Dhania) Powder
1/4 Tspn Cumin (Jeera) Powder
Salt to Taste
1 Cup Water


Directions

For Green Chutney
  1. Grind all the ingredients together into a smooth paste. Use immediately or transfer it to an airtight container & can be refrigerated for 1 week. Chutney can be used in all chat items.
For Tamarind Chutney
  1. Bring 1 cup of water to a boil in a pan on medium flame; add jaggery, pitted dates, tamarind extract & cook for 3-5 minutes or until dates become soft. 
  2. Add chilli powder, chaat masala, cumin powder, coriander powder, salt & cook for another 1-2 minutes. Turn off the flame & let it cool at room temperature.
  3. Grind the dates mixture to a smooth paste. Use immediately or transfer it to an airtight container & can be refrigerated for 1 month. Chutney can be used in all chat items.
For Dahi Puri
  1. In a bowl mash boiled potato with a spoon; add chilli powder, salt, chaat masala & combine well.
  2. In another bowl add sugar, curd & mix well. Keep aside.
  3. Make a hole at the center of each puri with your thumb. Stuff 1/2 teaspoon of potato mixture into each puri & add 1/2 teaspoon of tamarind chutney, 1/2 teaspoon of green chutney, 1 tablespoon of sweet yogurt into each puri.
  4. Sprinkle chopped onion, sev & serve immediately.
