1 Medium Sized Onion, finely chopped
Directions
- In a cooker add carrots, beans, potato, sweet corn, sweet mini peppers, green peas, cauliflower, water, little bit of salt & pressure cook for 5-6 whistles on a medium flame. Turn off the flame & let the pressure release naturally. Remove the lid & mash the cooked veggies. Keep aside. (Note: You can also add veggies of your choice).
- Heat 1 tablespoon oil in a pan on medium flame, add chopped onion & saute till they turn translucent. Add gingergarlic paste & saute for a minute.
- Add chilli powder, turmeric powder, salt, pav bhaji masala, cilantro leaves & saute for another minute. Now add chopped tomato & saute till it turns soft & mushy.
- Add mashed veggies & saute for 5-8 minutes or until bhaji thickens ( you may add more water if you need to). Turn off the flame. Add lemon juice & combine well. Keep aside.
- Slice each pav into two halves. Heat butter in a pan on medium-low flame & place the sliced pav on it. Toast on both the sides until golden brown & crisp.
- For arranging pav bhaji, place bhaji on each pav & garnish with chopped onion.
- Serve warm.
