Kakarakaya Fry/Bitter Gourd Fry

Ingredients

250 Grams Kakarakaya/Bitter Gourd
1 Tspn Red Chilli Powder
1/8 Tspn Turmeric Powder
Salt to Taste
1 Tspn Coriander(Dhania) Powder
1 Tblspn Tamarind  or add as needed, extract pulp
1 Tspn Jaggery(Bellam)
2 Tblspn Water
1 Tblspn Cilantro(Kothmir) Leaves
2 Tblspn Oil


Directions
  • Wash bitter gourd under running water & drain. Peel the outerskin, thinly slice the bittergourd & deseed as shown in the picture below.
  • Heat oil in a wide pan; add sliced bitter gourd & saute for 8-10 minutes by stirring occasionally. Add salt, red chilli powder, turmeric powder, coriander powder & saute for a minute.
  • Now add tamarind extract, water, jaggery as shown in the picture below.
  • Cover with a lid & cook for another 5-8 minutes. Turn off the flame & garnish with cilantro leaves.
  • Serve as a side dish with rice & sambar.
