Ingredients

For Dal

1 Cup Toor Dal(Kandhi Pappu)
1 Tspn Oil
1/8 Tspn Turmeric Powder
2 1/2 Cups Water

For Sambar/Pappu Charu

1 Small Sized Onion, thinly sliced
2 Medium Sized Tomatoes, chopped
1-2 Drumsticks(Mulakkada), cut into 2-inch pieces
2 Okras(Bhindi), cut into 1 inch pieces
3/4 Cup Bottle Gourd/Anapkaya, peeled & chopped into 1 inch cubes
Tamarind Lemon Sized or add as needed, extract pulp
1-2 Green Chillies, slit on one side
3/4 Tspn Red Chilli Powder
3/4 Tspn Coriander(Dhania) Powder
Pinch of Fenugreek(Methi) Powder
1/4 Tspn Cumin(Jeera) Powder
1 Tspn Gingergarlic Paste
Salt to Taste
1 Garlic Clove
Few Curry(Karivepaku) Leaves
2 Dried Red Chillies
1/2 Tspn Cumin(Jeera) Seeds
1/2 Tspn Mustard(Avaalu) Seeds
2 Sprigs of Curry(Karivepaku) Leaves
1 Tblspn Cilantro(Kothmir) Leaves
4 Cups Water or add as needed
2 Tblspn Oil

Directions

For Dal
  1. Wash toor dal under running water & drain.
  2. In a pressure cooker add all the ingredients & close the cooker lid. Pressure cook for 3-4 whistles on a medium flame. Turn off the flame & let the pressure release naturally. Open the lid & mash cooked dal with a masher to a smooth paste. Keep aside.

For Sambar/Pappu Charu
  • Heat oil in a large sauce pot on a medium flame; add cumin seeds, mustard seeds, sprigs of curry leaves, dried red chillies, green chillies, garlic clove & saute for a minute. Now add sliced onion, chopped tomatoes, drumsticks, okras, carrots, bottle gourd & saute for 5 minutes. Add gingergarlic paste & saute for another minute.
  • Now add tamarind extract, water, coriander powder, cumin powder, methi powder, red chilli powder, salt, cilantro leaves & bring it to a boil. Finally add mashed toor dal & cook for 10-15 minutes.
