Ingredients
3 Tblspn Quaker Oats(quick or old fashioned)
2 Eggs
2 Tblspn Milk
2 Tblspn Onion, chopped
2 Tblspn Tomato, chopped
1 Tblspn Carrot, shredded or 1 inch thinly sliced
Salt to Taste
3/4 Tspn Red Chilli Powder or add as needed
1/8 Tspn Gingergarlic Paste; optional
1 Tblspn Cilantro Leaves(Kothmir), chopped
2 Tspn Oil
Directions
- In a blender add oats & blend into a smooth powder. Keep aside.
- Beat eggs together until well blended; add salt, red chilli powder, gingergarlic paste, prepared oats powder, milk & mix well.
- Heat a teaspoon of oil in a pan on a medium flame; add onion, tomato, carrot (you can also add chopped mushrooms, chopped mini peppers, chopped spinach) & saute for a minute or until onion turns translucent.
- Transfer them to egg mixture & add cilantro leaves. Mix everything well & keep aside.
- Heat remaining oil in the same pan on a medium flame & pour prepared egg mixture. Spread it evenly by rotating the pan & cook until edges are brown, approximately 1-2 minutes.
- Carefully flip omelette over & cook for an additional 1-2 minutes.
- Turn off the flame & cut into wedges.
- Transfer to a plate & serve hot.
