Spiced Egg & Cheese Dosa

Yields: 3-4 Servings



Ingredients

1 Cup Dosa Batter
1-2 Green Chillies, chopped
3-4 Eggs
4-6 Tspn Curry Leaves Powder
1 Medium Sized Onion, finely chopped
1/2 Cup Amul Cheese, grated (you can use your choice of cheese)
Salt to Taste
1 Tspn Redchilli Powder
2 Tblspn Cilantro Leaves(Kothmir), chopped
Oil as needed

Directions
  • In a small bowl whisk eggs & add chopped onion, cilantro leaves, redchilli powder, salt, green chillies (in this step you can also add chopped tomato, sweet mini peppers). Mix everything well & keep aside.
  • Heat tava/nonstick skillet on a medium flame, apply 1/4 teaspoon oil on the tava & spread it evenly with a spatula. Pour a ladle full of batter on it & spread it in a circular motion using backside of a ladle. 
  • Sprinkle 1-2 teaspoons of curry leaves powder & immediately pour a ladle full of egg mixture on the dosa. Spread it evenly with a spatula & sprinkle 1/4 teaspoon oil around the edges. 
  • Cook till the base is golden & crisp or until edges start browning a bit. Flip to cook other side as well & flip again. 
  • Sprinkle 2-3 tablespoons of grated cheese on egg side & cook until cheese melts. Pass the spatula under it to ease the dosa off the pan & fold. 
  • Transfer to a plate & repeat the process with the remaining batter.
