For Masala Powder
1/2 Cup Broken Wheat
2 Tblspn Oats
6 Cashew Nuts
6 Pistachios
6 Almonds
1/2 Tspn Toor Dal
1/2 Tspn Yellow Moong Dal
1/2 Tspn Chana Dal
1/2 Tspn Urad Dal
1/2 Tspn Black Cumin Seeds(Shahjeera)
1 Small Cinnamon(Dalchini) Stick
1-2 Green Cardamom(Ellachi) Pods
2-3 Cloves(Lavang)

For Mutton Haleem
250 Grams Boneless Mutton, cut into medium pieces
2 Tblspn Almonds, chopped
2 Tblspn Cashew Nuts, chopped
2 Tblspn Pistachios, chopped
2 Medium Sized Onion, thinly sliced
5-6 Green Chillies, break into halves
Salt to Taste
2 Tspn Gingergarlic Paste
2 Tblspn Cilantro(Kothimir) Leaves, chopped

2 Tblspn Mint(Pudina) Leaves, chopped
3/4 Cup Milk
1/3 Cup Yogurt/Curd
4 Cups Water or add as required
2 Tblspn Lemon Juice
1 Lemon Wedge
1 Tblspn Oil

7 Tblspn Ghee/Clarified Butter
Directions
- For masala powder; add all the ingredients to a mixie jar & grind into a fine powder. Keep aside.
- Heat oil & 2 tablespoons of ghee in a pressure cooker on medium flame.
- Add sliced onions & saute until golden brown & crisp.
- Reserve few fried onions for garnish.
- Add 4 tablespoons of ghee, chopped nuts, green chillies, gingergarlic paste into the same pressure cooker & saute for a minute on a medium-low flame.
- Add mutton pieces, mint leaves, cilantro leaves & mix everything well.
- Cook for 5-8 minutes or until oil separates.
- Add milk, curd, salt & mix everything well.
- Add prepared masala powder, water & mix everything well (If the consistency becomes thick add 2-3 extra cups of water).
- Close the cooker lid & cook for 15 minutes on high flame (4-5 whistles).
- Then turn to low flame & cook for 45 minutes (Make sure to cook it on a low flame(sim) otherwise it might get burned at the bottom & do not cook for more than 45 minutes). It should not whistle even if it whistles it should be in 10 minutes time interval.
- Turn off the flame & let the pressure release naturally.
- Open the lid & mash with a masher or a spoon.
- Finally garnish with some fried onions, tablespoon of ghee & a lemon wedge.
