Beetroot Buttermilk/Beetroot Chaas

Ingredients

1 Small Sized Beetroot
1 Cup Curd/Yogurt
1 Inch Ginger, peeled 
Salt To Taste
2 Tblspn Mint Leaves(Pudina)
3 Cups + 1/4 Cup Water

Directions
  • Place a sauce pan on a medium-high flame with enough water for boiling beetroot. 
  • Add beetroot & boil for 10-12 minutes or until it turns soft.
  • Turn off the flame & allow it to cool at room temperature.
  • Using a peeler, peel the beetroot skin & chop into small cubes.
  • To a blender jar add beetroot cubes, ginger, cumin powder, mint leaves & blend into a smooth paste.
  • Add 1/4 cup water & blend again.
  • Using a strainer, strain the beetroot juice into a bowl.
  • Add curd, salt & whisk until everything is combined well.
  • Add 3 cups of water & whisk again.
  • Pour into a glass & serve immediately.
