Ingredients
1 Small Sized Beetroot
1 Cup Curd/Yogurt
1 Inch Ginger, peeled
Salt To Taste
1/2 Tspn Cumin(Jeera) Powder
2 Tblspn Mint Leaves(Pudina)
3 Cups + 1/4 Cup Water
Directions
- Place a sauce pan on a medium-high flame with enough water for boiling beetroot.
- Add beetroot & boil for 10-12 minutes or until it turns soft.
- Turn off the flame & allow it to cool at room temperature.
- Using a peeler, peel the beetroot skin & chop into small cubes.
- To a blender jar add beetroot cubes, ginger, cumin powder, mint leaves & blend into a smooth paste.
- Add 1/4 cup water & blend again.
- Using a strainer, strain the beetroot juice into a bowl.
- Add curd, salt & whisk until everything is combined well.
- Add 3 cups of water & whisk again.
- Pour into a glass & serve immediately.
