Beetroot Fry

Ingredients

4 Medium Sized Beetroot; washed, peeled & chopped into small cubes
1 Tspn Red Chilli Powder
3/4 Tspn Gingergarlic Paste
Salt to Taste
1/8 Tspn Turmeric Powder
1 Tspn Coriander(Dhania) Powder
1/2 Tspn Cumin(Jeera) Seeds
1/2 Tspn Mustard(Avaalu) Seeds
Few Curry Leaves(Karivepaku)
1 Tblspn Cilantro(Kothmir) Leaves, chopped
1/2 Tspn Urad Dal(Mina Pappu)
1/4 Tspn Chana Dal(Chanaga Pappu)
2 Tblspn Oil


Directions
  1. Heat oil in a pan on a medium flame; add cumin seeds, mustard seeds, curry leaves, urad dal, chana dal & saute it for 2 minutes. Add gingergarlic paste & saute for a minute. Now add red chilli powder, turmeric powder, coriander powder, salt & saute for another minute.
  2. Add chopped beetroot & mix well. Cover with a lid & on a medium-low flame; cook for 15-20 minutes by stirring occasionally. Turn off the flame & garnish with cilantro leaves.
  3. Serve with rice or roti.
