Tindora Fry/Dondakaya Fry

Ingredients

500 Grams Tindora/Dondakaya
1 Tspn Red Chilli Powder
3/4 Tspn Gingergarlic Paste
Salt to Taste
1/8 Tspn Turmeric Powder
1 Tspn Coriander(Dhania) Powder
1/2 Tspn Cumin(Jeera) Seeds
1/2 Tspn Mustard(Avaalu) Seeds
Few Curry Leaves(Karivepaku)
1 Tblspn Cilantro(Kothmir) Leaves, chopped
1 Tspn Urad dal(optional)
2 Tblspn Oil

Directions
  1. Wash tindora under running water & drain. Chop off the ends & cut each tindora into thin long strips lengthwise.
  2. Heat oil in a pan on a medium-low flame; add cumin seeds, mustard seeds, curry leaves, urad dal & saute it for a minute. 
  3. Add chopped tindora & mix well. Cook for 10 minutes.
  4. Add gingergarlic paste & saute for a minute. Now add red chilli powder, turmeric powder, coriander powder, salt & saute for another minute.
  5. Cook for another 10-12 minutes or until tindora turns soft.
  6. Add cilantro leaves & mix everything well. 
  7. Turn off the flame & transfer to a serving bowl.
  8. Serve with rice or roti.
