Aloo Paratha/Paratha Stuffed With Potato Curry

Ingredients

1 Cup Wheat Flour(Atta)
Salt to Taste
1 Tspn Oil
1/2 Cup Water or add as needed

For Stuffing

2 Medium Sized Potatoes; boil, peel & mash
1 Small Sized Onion, finely chopped
1 Small Sized Tomato, chopped (optional)
Salt to Taste
1/8 Tspn Turmeric Powder
1/4 Tspn Gingergarlic Paste
1/8 Tspn Garam Masala Powder
1/2 Tspn Chaat Masala
1/2 Tspn Red Chilli Powder
1 Tblspn Cilantro(Kothmir) Leaves, chopped
1 Tblspn Oil


Directions
  • In a bowl; combine wheat flour, water & salt to make a dough. Drizzle oil on top to coat the dough & knead to a smooth ball(add little water if required). Cover with a damp cloth & let the dough rest for 10 minutes. 
  • For stuffing; heat oil in a pan on a medium flame; add chopped onion & fry until they turn translucent. Add gingergarlic paste, red chilli powder, salt, chaat masala, garam masala powder, turmeric powder & saute for another minute.
  • Now add chopped tomatoes & cook until they turn soft. Add mashed potato, cilantro leaves & cook for 3-5 minutes. Turn off the flame & transfer to a bowl.
  • Place the dough on a well floured surface & make 4 equal size balls from the dough. Take one dough ball & flatten it using your palm.
  • Using a rolling pin roll each dough into 4 inch diameter circle & place 2 tablespoons of potato stuffing leaving 1 inch space on the edge as shown in the picture below.
  • Pinch all the edges towards the center as shown in the picture below.
  • Using a rolling pin roll each stuffed dough into a 7 inch diameter circle on the floured surface.
  • Heat a tawa on medium high flame.
  • Place the paratha on heated tawa & once you see little bubbles, flip the paratha & drizzle some oil on top. Flip again & drizzle some oil on the other side as well. Flip again & press with a spatula for a minute. Tranfer to a plate.
  • Serve aloo paratha with mango pickle.
