Dosakaya Tomato Curry/Yellow Cucumber Tomato Curry

Ingredients

1 Medium Sized Dosakaya/Yellow Cucumber;
1 Medium Sized Onion, finely chopped
2 Medium Sized Tomatoes, chopped
1 Tspn Red Chilli Powder
1/8 Tspn Turmeric Powder
3/4 Tspn Gingergarlic Paste
Salt to Taste
1 Tblspn Cilantro(Kothmir) Leaves
1 Tblspn Oil
3/4 Cup Water or add as needed


Directions
  • Wash dosakaya/yellow cucumber, peel, remove the seeds & cut into 1/2 inch cubes.
  • Heat oil in a wide pan on a medium flame, add chopped onion & fry until they turn translucent. 
  • Add gingergarlic paste & saute for a minute. Now add red chilli powder, turmeric powder, salt & saute for another minute.
  • Add chopped yellow cucumber & saute for 3-5 minutes. 
  • Now add chopped tomatoes & cook for another 2-3 minutes.
  •  Finally add water & mix. 
   
  • Cover with a lid & cook for 10-12 minutes or until yellow cucumber turns soft by stirring occasionally. Turn off the flame & garnish with cilantro leaves.
  • Serve hot with rice or roti.
