Ingredients
1/2 Kg Mutton bone-in, cut into medium sized pieces
150 Grams Sour Leaves/Gongura, washed & chopped
2 Medium Sized Onion, finely chopped
4 Green Chillies, slit on one side
1/4 Tspn Cumin(Jeera) Seeds
1 Tblspn Red Chilli Powder
1/2 Tspn+ 1/8 Tspn Turmeric Powder
Salt to Taste
1 Tblspn Gingergarlic Paste
2 Tblspn Cilantro(Kothmir) Leaves, chopped
1 Cup Water or add as needed

Directions
- Wash mutton pieces under running water & keep aside to drain.
- Heat 2 tablespoons of oil in a pressure cooker on a medium flame, add 3/4th chopped onion & saute until they turn translucent.
- Add gingergarlic paste & saute for a minute.
- Add red chilli powder, 1/2 teaspoon turmeric powder, salt & saute for another minute.
- Now add the washed mutton, cilantro leaves & combine well. Cook for 5-10 minutes or until oil separates.
- Add water & close the cooker lid.
- Pressure cook for 5-6 whistles or until mutton turns soft. Turn off the flame & let the pressure release naturally.
- Meanwhile; in a sauce pan add chopped sour leaves, green chillies, 1/8 teaspoon turmeric powder, cumin seeds, remaining onion, 1 tablespoon oil & cover with a lid.
- Cook on a medium-low flame for 15-20 minutes or until sour leaves turn soft by stirring in between.
- Turn off the flame & using a masher mash sour leaves mixture into a paste.
- Open the cooker lid & add sour leaves mixture into mutton curry. Mix everything well.
- Cook on a medium-low flame for 10-15 minutes & turn off the flame.
- Serve gongura mutton with rice or roti or tandoori roti.
