1 Cup Mixed Vegetables (Chopped Carrots, Chopped French Beans, Green Peas, Sweet Corn)
1 Medium Sized Potato; boil, peel & mash
1 Medium Sized Onion, finely chopped
1 Tspn Red Chilli Powder
3/4 Tspn Chaat Masala
1/8 Tspn Turmeric Powder
Salt to Taste
1/2 Tspn Gingergarlic Paste
2 Tblspn Gram Flour (Besan)
2 Tblspn Gram Flour (Besan)
1 Tspn Lemon Juice
1/2 Tspn Cumin(Jeera) Seeds
1 Tblspn Cashews, broken
1 Tblspn Cilantro Leaves (Kothmir), chopped
2 Tblspn Mint Leaves (Pudina), chopped
1 Tblspn + 2 Tspn Oil
Directions
- Heat 1 tablespoon oil in a pan on medium flame; add cumin seeds & let them splutter. Now add chopped onion & saute until they turn translucent.
- Add gingergarlic paste & saute for a minute. Add red chilli powder, salt, turmeric powder, chaat masala & saute for another minute.
- Now add mixed vegetables, cilantro leaves, mint leaves & cook for 5-8 minutes.
- Add broken cashews & saute for a minute.
- Finally add gram flour & mix everything well.
- Cook for 2 more minutes by stirring continuously & turn off the flame.
- Let it cool at room temperature before adding it to a mixie jar & grind into a coarse paste by adding lemon juice.
- Transfer to a bowl & add mashed potato.
- Combine everything well & divide the mixture into 8-12 equal portions.
- Make oval shape & insert into skewer (i used toothpicks instead of skewers; make sure to soak toothpicks in cold water for 10 minutes before using).
- Heat a greased tawa on a medium-low flame & place the skewers on tawa. Brush with some oil & roast them on all sides until golden brown.
- Transfer them to a plate & serve hot with green chutney.
