4-5 Medium Sized Ridge Gourd/Beerakaya, peel & cut into 3/4th inch cubes
2 Medium Sized Tomato, chopped
1 Medium Sized Onion, finely chopped
1 Tspn Red Chilli Powder
Salt to Taste
1/8 Tspn Turmeric Powder
1/2 Tspn Gingergarlic Paste
1 Tblspn Cilantro Leaves (Kothmir)
1/2 Cup Water

Directions
- Heat oil in a wide pan on a medium-low flame; add chopped onion(in this step you can also add a tablespoon of urad dal) & fry until they turn translucent.
- Add gingergarlic paste, red chilli powder, turmeric powder, salt & saute for another minute.
- Now add chopped ridge gourd & mix everything well. Cook for 2-4 minutes.
- Add chopped tomatoes & mix everyting well. Cook until tomato turns soft & mushy.
- Add water & mix everything well. Cover with a lid & cook for 10-12 minutes or until ridge gourd turns soft.
- Turn off the flame & finally garnish with cilantro leaves.
- Serve with rice or roti.

- Turn off the flame & serve with rice or roti.
