Egg Tomato Curry

Ingredients

2 Boiled Eggs, slice into 2 halves
1 Medium Sized Onion, finely chopped
6 Medium Sized Tomatoes, chopped
Salt to Taste
2 Tspn Red Chilli Powder
1/8 Tspn Turmeric Powder
1 Tspn Coriander(Dhania) Powder
3/4 Tspn Gingergarlic Paste
1 Tblspn Mint(Pudina) Leaves, chopped
1 1/2 Tblspn Oil

Directions
  • Heat oil in a sauce pan on a medium flame; add chopped onion & fry until they turn translucent. 
  • Add gingergarlic paste, red chilli powder, salt, coriander powder, turmeric powder & saute for another minute.
  • Now add chopped tomatoes & mix everything well.
  • Cook until tomatoes turn soft & mushy. Add mint leaves & cook for a minute.
  • Finally add sliced eggs & mix everything well. 
  • Cook for another 3-5 minutes. Turn off the flame. 
  • Serve hot with rice or roti.
