3 Cups Cooked White Rice(1 cup uncooked rice yields 3 cups cooked rice)
3/4 Cup Cottage Cheese/Paneer, cut into 3/4-inch cubes
1 Medium Sized Onion, chopped
1 Tspn Red Chilli Powder or 2-3 Green Chillies
3/4 to 1 Cup Mint Leaves (Pudina)
1/2 Tspn Gingergarlic Paste
Salt to Taste
1/2 Tspn Coriander(Dhania) Powder
1/4 Tspn Garam Masala Powder
1/4 Tspn Cumin(Jeera) Seeds
1/8 Tspn Mustard(Avaalu) Seeds
1 Small Cinnamon(Dalchini) Stick
2-3 Green Cardamom(Ellachi) Pods
1-2 Tblspn Water
1 1/2 Tblspn Oil

Directions
- Grind mint leaves, green chillies(if using red chilli powder don't add green chillies), salt to a smooth paste by adding water & keep it aside.
- Heat oil in a sauce pan on medium flame; add cumin seeds, mustard seeds, cinnamon stick, cardamom pods & saute for a minute. Add onion & cook until they turn translucent.
- Now add gingergarlic paste, red chilli powder (if not using green chillies), coriander powder, garam masala powder & saute for another minute. Add paneer cubes & saute for 1-2 minutes.
- Add mint paste & saute for 3-5 minutes.
- Add cooked rice & combine well. Saute for another 3-5 minutes & turn off the flame.
- Serve paneer mint rice with raita.
