Carrot Rice

Ingredients

3 Cups Cooked White Rice(1 cup uncooked rice yields 3 cups cooked rice)
3/4 Cup Carrots, cut into small cubes
1 Medium Sized Onion, chopped
1 Tspn Red Chilli Powder
1/2 Tspn Gingergarlic Paste
Salt to Taste
1/2 Tspn Coriander(Dhania) Powder
1/4 Tspn Garam Masala Powder
1/4 Tspn Cumin(Jeera) Seeds
1/8 Tspn Mustard(Avaalu) Seeds
1 Small Cinnamon(Dalchini) Stick
2-3 Green Cardamom(Ellachi) Pods
1 1/2 Tblspn Oil

Directions
  • Heat oil in a sauce pan on medium flame; add cumin seeds, mustard seeds, cinnamon stick, cardamom pods & saute for a minute. Add onion & cook until they turn translucent. 
  • Now add gingergarlic paste, red chilli powder, coriander powder, garam masala powder & saute for another minute. 
  • Add chopped carrots & saute for 8-10 minutes or until they turn soft on a medium-low flame
  • Add cooked rice & combine well. Saute for another 3-5 minutes & turn off the flame. 
  • Serve carrot rice.
