Ingredients
1/4 Cup Yellow Bell Pepper, finely chopped
1/3 Cup Thick Yogurt/Curd
6-8 Bread Slices
Salt to Taste
1/2 Tspn Black Pepper Powder or Red Chilli Powder
1/2 Tspn Chaat Masala or 1/4 Tspn Garam Masala Powder (optional)
4 Tspn Green Chutney (optional)
1 Tblspn Butter

1/2 Cup Grated Carrots
1 Medium Sized Tomato, discard the pulp & chop finely
1 Medium Sized Onion, finely chopped1/4 Cup Yellow Bell Pepper, finely chopped
1/3 Cup Thick Yogurt/Curd
6-8 Bread Slices
Salt to Taste
1/2 Tspn Black Pepper Powder or Red Chilli Powder
1/2 Tspn Chaat Masala or 1/4 Tspn Garam Masala Powder (optional)
4 Tspn Green Chutney (optional)
1 Tblspn Butter
Directions
- In a bowl add grated carrots, chopped onion, chopped tomato, chopped bell pepper, pepper powder, salt, chaat masala, yogurt & mix everything well with a spoon (you can also add chopped cabbage, green peas, boiled sweet corn). Keep aside.
- Heat a tawa on medium-low flame; spread little butter on tawa with a spatula or apply on both sides of each bread slice & toast them on both sides until golden brown & crisp. Transfer them to a plate & keep aside.
- For assembling a sandwich; take a toasted bread slice & spread a teaspoon of green chutney over it (check out my blog for green chutney recipe).
- Place 3 tablespoons of yogurt veg stuffing & cover it with another toasted bread slice.
- Repeat the process with remaining toasted bread slices & cut each veg sandwich diagonally.
- Serve veg sandwich immediately.
