Paneer Quesadilla/Cheesy Paneer Roti Sandwich

Ingredients

8 Cheese Slices or 1 1/2 Cup Shredded Cheddar Cheese (you can also use your choice of cheese)
1 Large Sized Onion, thinly sliced
1/2 Cup Baby Bella Mushrooms, sliced (optional)
1/2 Cup Tiny Tomatoes, cut into halves (you can also use regular tomatoes, finely chopped)
3/4 Cup Cottage Cheese/Paneer, cubed into 1/2 inch pieces (you can also use shredded paneer)
Salt to Taste
3/4 Tspn Red Chilli Powder
1/8 Tspn Turmeric Powder
1/4 Tspn Garlic Powder
1/2 Tspn Chaat Masala Powder
1/4 Tspn Cumin(Jeera) Powder
2 Tblspn Oil + for Drizziling

Directions
  • Heat oil in a wide pan on medium flame; add sliced mushrooms & saute for 8-10 minutes. 
  • Now add sliced onion, cubed paneer & saute for 4-5 minutes.
  • Add red chilli powder, chaat masala powder, salt, garlic powder, cumin powder, turmeric powder & mix everything well. Finally add tiny tomatoes & saute for another minute.
  • Turn off the flame & keep aside.
  • For assembling a roti sandwich; heat a large skillet or pan on low flame & drizzle little oil on skillet. Place one roti in a pan & add half of the paneer mushroom mixture over it. 
  • Sprinkle 3/4 cup shredded cheddar cheese or 4 cheese slice chunks over the paneer mixture & cover it with another roti. 
  • Cook until golden brown & carefully flip the roti sandwich to the other side. Continue cooking until second side is golden brown or until cheese melts completely & transfer to a plate. 
  • Repeat with the remaining rotis by drizziling little oil on skillet each time & cut each paneer mushroom sandwich into wedges. 
  • Serve hot with ranch or marinara sauce.
