Egg Masala Rice

Ingredients

3 Cups Cooked Rice (1 cup uncooked rice yields 3 cups cooked rice)
4 Eggs
6-8 Green Chillies, chopped
1 Medium Sized Tomato, chopped
1/4 Cup Chopped Carrot
1/4 Cup Green Peas
Salt to Taste
1/2 Tspn Cumin(Jeera) Seeds
3/4 Tspn Garam Masala Powder
1 Tspn Pav Bhaji Masala
2 Tblspn Cilantro Leaves(Kothmir), chopped
2 Tblspn Oil


Directions
  • Whisk eggs in a bowl with spoon.
  • Heat oil in a pan or wok on medium flame; add cumin seeds, green chillies & saute for a minute. Add carrots, peas & cook for another 3-5 minutes. 
  • Add chopped tomato, cilantro leaves & cook until they turn soft & mushy.
  • Now pour in the whisked eggs & scramble lightly. 
  • Once it is cooked add salt, garam masala powder, pav bhaji masala & mix everything well.
  • Add cooked rice & mix everything well.
